Summer Side-dishes: Crisp Corn on the Cob

During most of the year, only canned and frozen corn are both economic and palatable, but beginning in early August and continuing throughout the month, most supermarkets will carry fresh ears of corn for a relatively low price. And corn on the cob is such a versatile choice that making good use of its availability is easy. It requires very little preparation and accompaniment to shine on its own, but can easily be integrated into a more sophisticated meal by using it in new combinations. It can be simply boiled, and served with salt and butter; corn on the cob is also excellent grilled for a summer barbecue. Fresh, trendy condiments like gourmet mayonnaises can be played well against the sweet taste and crisp, juicy texture of the vegetable also.
And corn is a healthy addition to most diets, also. Corn may help manage stress, thanks to the adrenal gland supporting functions of its high levels of vitamin B5. It’s also good for cardiovascular health, containing nearly 20% of the daily requirement of folate in a single serving.
